Ingredients
Sauce
- 3 tbsp low-sodium soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp cornstarch
- 3 tbsp water
Stir-fry
- 1 tbsp vegetable oil
- 1 lb green beans, trimmed and cut into 2-inch pieces
- 1 lb ground pork
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- ½ tsp red pepper flakes (optional)
- 3 green onions, sliced
- 3 cups cooked rice, for serving
Cook to 160°F inside (check with a thermometer).
Steps
- Whisk the soy sauce, hoisin, vinegar, sesame oil, cornstarch and water together in a small bowl.
- Heat the vegetable oil in a 12-inch skillet over medium-high heat until it shimmers.
- Add the green beans and cook, stirring only now and then, until blistered in spots and crisp-tender. Move them to a plate.
- Add the pork to the hot pan and break it into small crumbles with a spatula.
- Cook without stirring too much until browned and crispy in spots, no pink remains and it reaches 160°F (71°C).
- Push the pork to the side, add the garlic, ginger and pepper flakes (if using) to the cleared spot and stir until fragrant.
- Return the green beans to the pan. Stir the sauce, pour it in and toss.
- Cook, tossing, until the sauce bubbles and coats everything.
- Sprinkle with green onions and serve over rice.
Tip: Ground chicken or turkey works too; cook it to 165°F.
Tip: Pat the green beans dry after washing so they blister instead of steam.
Tip: Use a separate cutting board for raw meat, and wash hands, boards and knives in hot soapy water after handling it.
Storage: Refrigerate in an airtight container within 2 hours, up to 3 days. Reheat in a skillet or microwave until hot.
