Easy Cheese Quesadillas for Kids
Two ingredients, one pan and about 10 minutes. Low heat makes a crisp, golden tortilla with fully melted cheese inside, and cutting it into triangles makes it easy for little hands.

Ingredients
- 2 flour tortillas, 8-inch
- 1 cup cheddar cheese, or a cheddar-jack mix, shredded
- 1 tsp butter, or a little oil (optional)
- salsa, sour cream or guacamole, for dipping (optional)
Steps
- Lay the tortillas flat and sprinkle 1/2 cup cheese over one half of each.
- Fold each tortilla over the cheese to make a half-moon and press gently.
- Heat a nonstick skillet over medium-low heat. Add the butter, if using, and swirl it around.
- Lay both quesadillas in the pan with the folded edges in the middle.
- Cook until the bottoms are golden and the cheese starts to melt.
- Flip with a spatula and cook until the second side is golden and the cheese is completely melted.
- Move to a cutting board and let them cool for 1 minute so the cheese isn't molten.
- Cut each into 3 triangles and serve with dips, if you like.
Tip: If the tortilla browns before the cheese melts, turn the heat down and cover the pan for a minute.
Tip: For a lunch box, let the wedges cool completely before packing so they don't steam and go soft.
Storage: Best fresh. Leftovers keep in the fridge 2 days; reheat in a dry skillet until hot and crisp.
