Ingredients
- 12 mini bagels, split in half
- ¾ cup marinara sauce, or pizza sauce
- 1 ½ cups mozzarella, shredded
- 48 mini pepperoni, or 24 regular slices cut in half (optional)
- ½ tsp italian seasoning (optional)
- 2 tbsp parmesan, grated (optional)
Steps
- Heat the oven to 425°F (220°C). Line a sheet pan with parchment.
- Lay the bagel halves on the pan, cut side up.
- Toast them in the oven until the cut sides are dry and just starting to crisp, so the sauce doesn't soak in.
- Spread about 1 1/2 teaspoons of sauce on each half.
- Top each with a pinch of mozzarella, 2 mini pepperoni and a sprinkle of Italian seasoning and parmesan, if using.
- Bake until the cheese is melted, bubbly and starting to brown at the edges.
- Let them cool for 2 minutes before eating; the sauce is very hot.
Tip: Go light on the sauce. Too much makes them soggy.
Tip: Set out bowls of toppings and let kids build their own.
Storage: Refrigerate baked leftovers up to 3 days and reheat at 400°F for 5 minutes.
Make ahead: Freeze assembled, unbaked bagels on the sheet pan for 1 hour, then bag them for up to 2 months. Bake from frozen at 425°F for 10 to 12 minutes, until bubbly and hot in the center.
