Ingredients
- 3 medium apples, crisp, like Honeycrisp or Gala
- 1 tbsp lemon juice
- 1 cup water, cold
- ¼ cup peanut butter, creamy
- 1 tbsp honey
- ¼ cup granola, use certified gluten-free if needed
- 2 tbsp mini chocolate chips
- 1 pinch ground cinnamon (optional)
Steps
- Stir the lemon juice into the cold water in a bowl.
- Core the apples and cut them into thin slices, about 1/4 inch thick.
- Dip the slices in the lemon water and pat them dry, so they don't turn brown.
- Fan the apple slices out on a large plate, overlapping them like nacho chips.
- Warm the peanut butter in a small bowl in the microwave until it drizzles easily, about 20 seconds.
- Drizzle the peanut butter and honey over the apples with a spoon.
- Sprinkle with granola, chocolate chips and a pinch of cinnamon, if using. Serve right away.
Tip: Swap peanut butter for sunflower seed butter or yogurt for a nut-free version.
Tip: Pears work just as well as apples.
Storage: Best eaten right away.
