Crisp Classic Waffles

Steps

  1. Plug in the waffle iron to heat. Heat the oven to 200°F (95°C) and set a wire rack on a sheet pan inside.
  2. Whisk the flour, cornstarch, sugar, baking powder, baking soda and salt in a large bowl.
  3. In a second bowl, whisk the eggs until smooth, then whisk in the buttermilk, melted butter and vanilla.
  4. Pour the wet ingredients into the dry and fold with a spatula just until no dry flour shows. Small lumps are fine.
  5. Let the batter rest while the iron finishes heating.
  6. Brush or spray the hot waffle iron with a little oil.
  7. Pour in enough batter to cover about two-thirds of the grid (usually 1/2 to 2/3 cup) and close the lid.

Steps, continued

  1. Cook until the steam slows to a wisp and the waffle is deep golden and releases easily. Follow your iron's light if it has one.
  2. Move the waffle to the rack in the warm oven so it stays crisp. Repeat with the rest of the batter.
  3. Serve with butter, maple syrup and berries.
