Steps

  1. In a large bowl, rub the lemon zest into the sugar with your fingertips until the sugar is damp and smells strongly of lemon.
  2. Add the soft butter and beat on medium speed until light and creamy.
  3. Beat in the egg and vanilla until smooth.
  4. In another bowl, whisk the flour, baking powder and salt.
  5. Add the flour mixture to the butter mixture and mix on low speed just until a soft dough forms.
  6. Divide the dough in half. Put one half between two large sheets of parchment and roll it 1/4 inch thick. Repeat with the other half.
  7. Stack the rolled sheets (still in their parchment) on a sheet pan and refrigerate until firm.

  3. Lift the shapes onto the lined pans with a thin spatula, about 1 inch apart.
  4. Bake one pan at a time until the edges are barely golden.
  5. Gather the scraps, roll them between parchment once more, chill 10 minutes and cut more cookies.
  6. Let the cookies sit on the pan 5 minutes, then move them to a rack until completely cool.
