Green Pineapple Smoothie

Fresh spinach blended with pineapple, banana and a squeeze of lime. It looks very green but tastes bright and fruity, with no leafy flavor.

Ingredients

  • 1 cup water, or coconut water
  • 2 cups baby spinach, loosely packed
  • 1 ½ cups frozen pineapple chunks
  • 1 banana, frozen, broken into chunks
  • 1 tbsp lime juice
  • ½ tsp ginger, finely grated (optional)

Steps

  1. Put the water and spinach in the blender.
  2. Blend on high until no bits of leaf are left. Blending the greens first is what makes the smoothie silky.
  3. Add the frozen pineapple, banana, lime juice and ginger if using.
  4. Blend on low, then on high until smooth.
  5. Add a splash more water if it is too thick, then pour and serve right away.

Tip: Frozen mango works in place of pineapple.

Tip: Add 1/2 cup Greek yogurt for a creamier smoothie (it will no longer be vegan).

Storage: Drink right away. It can separate as it sits; stir or shake to bring it back.
