Ingredients

Roast

  • 1 ½ lb baby potatoes, halved, or quartered if large
  • 3 tbsp olive oil, divided
  • 1 tsp kosher salt, divided
  • ¼ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 14 oz fully cooked smoked sausage or kielbasa, sliced into 1/2-inch coins
  • 1 medium head broccoli, cut into florets (about 4 cups)
  • 1 red bell pepper, cut into chunks
  • 1 small red onion, cut into wedges

Honey mustard

  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp apple cider vinegar

Cook to 165°F inside (check with a thermometer).

Steps

  1. Heat the oven to 425°F (220°C) and line a large sheet pan with parchment.
  2. Toss the potatoes on the pan with 1 1/2 tablespoons oil, 1/2 teaspoon salt, the pepper, garlic powder and paprika. Turn them cut side down.
  3. Roast the potatoes alone so they get a head start.
  4. Take out the pan and add the sausage, broccoli, bell pepper and onion. Drizzle with the remaining oil and salt and toss everything together, spreading it into one layer.
  5. Roast until the potatoes are tender and crisp, the broccoli is browned at the tips and the sausage is sizzling and hot all the way through (165°F / 74°C).
  6. Whisk the honey mustard ingredients and drizzle over the pan before serving.

Tip: Smoked sausage and kielbasa are already cooked, so they just need to get hot (165°F). If you use raw Italian sausage instead, roast it with the potatoes from the start and cook it to 160°F.

Tip: Swap in whatever vegetables you have: Brussels sprouts, zucchini or green beans all work.

Storage: Refrigerate up to 4 days. Reheat on a sheet pan at 400°F (200°C) to re-crisp.
