Ingredients

  • ¼ cup rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp honey
  • 1 tbsp fresh ginger, peeled and finely grated
  • 1 clove garlic, finely grated
  • ⅓ cup vegetable oil
  • 1 tsp sesame seeds, toasted
  • ¼ tsp red pepper flakes (optional)

Steps

  1. Put the rice vinegar, soy sauce, sesame oil, honey, ginger and garlic in a jar and stir until the honey dissolves.
  2. Add the vegetable oil, screw on the lid and shake hard until the dressing looks blended, about 20 seconds.
  3. Stir in the sesame seeds and red pepper flakes. Taste it on a piece of cabbage or lettuce and add a little more honey or vinegar to balance.

Tip: Scrape the skin off the ginger with the edge of a spoon before grating; it follows every bump.

Tip: It doubles as a marinade for chicken, pork or tofu. Throw away any marinade that touched raw meat.

Storage: Refrigerate and use within 4 days, since it has fresh garlic and ginger. Shake before using.
