Pressure Cooker Pot Roast
- 3 lb boneless beef chuck roast, cut into 3 even pieces
- 1 ½ tsp kosher salt
- ¾ tsp black pepper
- 1 tbsp vegetable oil
- 1 onion, cut into wedges
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 ½ cups beef broth
- 1 tbsp worcestershire sauce
- 1 tsp dried thyme
- 1 bay leaf
- 1 ½ lb baby potatoes, halved
- 1 lb carrots, peeled, cut into 2-inch pieces
- 2 tbsp cornstarch
- 2 tbsp water
Pressure Cooker Pot Roast
- Pat the beef pieces dry and season them all over with the salt and pepper.
- Set the pressure cooker to sauté on high and add the oil.
- Brown the beef in two batches, turning once, then move it to a plate.
- Add the onion and cook, stirring, until it softens a little.
- Stir in the garlic and tomato paste and cook until fragrant.
- Pour in the broth and scrape the bottom of the pot until no browned bits stick. This prevents a burn warning.
- Stir in the Worcestershire, thyme and bay leaf. Return the beef and its juices to the pot.
- Lock the lid and set the valve to sealing.
- Cook at high pressure. (The pot takes about 10 to 15 minutes to come up to pressure before the countdown starts.)
- Let the pressure release naturally.
- Turn the valve to venting to release any pressure that remains, then open the lid away from your face.
- Add the potatoes and carrots on top of the beef. Don't stir.

- Quick-release the pressure by turning the valve to venting, then open the lid away from your face.

- Set the pot to sauté. Stir the cornstarch and water together, stir it into the liquid and simmer until thickened.
- Pull the beef into chunks and serve with the vegetables and gravy.
- Cook to 145°F inside (check with a thermometer).
