Ingredients
Dry
- 1 ¾ cups gluten-free all-purpose flour blend, measure-for-measure type that contains xanthan gum
- 2 tbsp granulated sugar
- 2 tsp baking powder, check that it's labeled gluten-free
- ½ tsp baking soda
- ½ tsp kosher salt
Wet
- 1 ¾ cups buttermilk
- 2 large eggs
- 3 tbsp unsalted butter, melted, plus more for the pan
- 1 tsp vanilla extract, check that it's labeled gluten-free
Steps
- Whisk the gluten-free flour, sugar, baking powder, baking soda and salt in a large bowl.
- Whisk the buttermilk, eggs, melted butter and vanilla in a second bowl, then stir into the dry ingredients just until smooth.
- Let the batter rest so the gluten-free flours soak up the liquid. This makes the pancakes tender instead of gritty. It will get thick and bubbly.
- Heat a clean nonstick skillet or griddle over medium heat and brush with butter. Pour 1/4-cup scoops of batter and gently spread each one to about 4 inches.
- Cook until the edges look dry and a few bubbles appear on top. Gluten-free batter shows fewer bubbles, so peek underneath for golden color.
- Flip and cook until golden and cooked through.
- Serve warm with your favorite toppings.
Tip: If you're cooking for someone with celiac disease, use clean bowls, utensils and pans that haven't touched wheat flour, and check every label.
Tip: Different blends absorb differently. If the rested batter is too thick to pour, stir in buttermilk a tablespoon at a time.
Storage: Refrigerate up to 3 days or freeze up to 2 months. Toast to reheat; they get crisp edges.
