Ingredients
- 1 medium banana, ripe, divided
- 2 tbsp peanut butter
- 1 cup rolled oats, old-fashioned
- 1 cup milk
- ½ cup greek yogurt, plain or vanilla
- 1 tbsp chia seeds (optional)
- 1 tbsp maple syrup, or honey
- ¼ tsp ground cinnamon
- 1 pinch kosher salt
Steps
- Mash half the banana in a medium bowl with a fork until mostly smooth.
- Add the peanut butter and stir it into the banana until combined.
- Add the oats, milk, yogurt, chia seeds (if using), maple syrup, cinnamon and salt. Stir until no dry oats remain.
- Divide between 2 jars or containers and close the lids.
- Refrigerate overnight, or at least 6 hours, so the oats soften.
- In the morning, stir each jar. Add a splash of milk if it's thicker than you like.
- Slice the rest of the banana over the top and eat cold, or microwave 1 to 2 minutes if you like it warm.
Tip: For a nut-free version, use sunflower seed butter.
Tip: Stir the peanut butter into the banana first. It blends in smoothly instead of staying in clumps.
Storage: Refrigerate up to 3 days. Add the fresh banana slices just before eating so they don't brown.
Make ahead: Make up to 3 jars at a time for the work or school week.
