Ingredients

Oats

  • ½ cup old-fashioned rolled oats
  • ½ cup milk, dairy or plant-based
  • ¼ cup plain or vanilla Greek yogurt
  • 1 tbsp chia seeds (optional)
  • 2 tsp maple syrup or honey, to taste
  • ¼ tsp vanilla extract
  • 1 pinch kosher salt

Toppings

  • ⅓ cup berries or sliced banana
  • 1 tbsp peanut butter, nuts or granola (optional)

Steps

  1. Add the oats, milk, yogurt, chia seeds, maple syrup, vanilla and salt to a pint jar or container.
  2. Stir well, scraping the bottom so no dry oats hide there. Cover tightly.
  3. Refrigerate overnight, or at least 6 hours, so the oats soften and thicken.
  4. In the morning, stir and loosen with a splash of milk if it's too thick. Add your toppings and eat cold, or microwave 1 to 2 minutes if you prefer it warm.

Tip: Use old-fashioned oats. Steel-cut oats stay too firm, and instant oats turn mushy.

Tip: Try a flavor twist: cocoa and banana, apple and cinnamon, or peanut butter and jam.

Storage: Keeps covered in the fridge up to 4 days. Add crunchy toppings and banana just before eating.

Make ahead: Make 4 jars on Sunday for the week.
