Ingredients

  • 8 cups apple cider, fresh, unfiltered
  • 1 medium orange, sliced into rounds
  • 3 cinnamon sticks
  • 1 tsp whole cloves
  • 1 piece fresh ginger, 1-inch piece, sliced (optional)
  • 2 tbsp brown sugar, or maple syrup, to taste (optional)

Steps

  1. Pour the cider into a large saucepan or pot and add the orange slices, cinnamon sticks, cloves and ginger.
  2. Warm over medium heat until it steams and tiny bubbles form at the edges.
  3. Lower the heat and keep it just below a simmer so the spices steep without the cider boiling.
  4. Taste and stir in brown sugar if your cider is tart.
  5. Ladle into mugs through a small strainer, or scoop out the spices first.

Tip: For a party, move the cider to a slow cooker on low or warm to keep it hot for a few hours.

Tip: Loose cloves are easiest to fish out tied in a square of cheesecloth.

Storage: Strain, cool and refrigerate up to 5 days. Reheat on the stove.
