Ingredients
- 2 cups whole milk
- 2 tbsp unsweetened cocoa powder
- 2–3 tbsp granulated sugar
- 1 pinch kosher salt
- 2 oz semisweet chocolate, finely chopped, or 1/3 cup chips
- ¼ tsp vanilla extract
- marshmallows or whipped cream, for topping (optional)
Steps
- In a small saucepan, whisk the cocoa, sugar and salt with about 1/4 cup of the milk to make a smooth paste.
- Whisk in the rest of the milk and warm over medium heat, whisking often, until steaming with small bubbles at the edges. Don't let it boil.
- Lower the heat and whisk in the chopped chocolate until fully melted and smooth.
- Take it off the heat, stir in the vanilla, taste and add more sugar if you like. Pour into mugs and top with marshmallows or whipped cream.
Tip: Stir in a pinch of cinnamon or a drop of peppermint extract for a holiday twist.
Tip: Oat milk makes an excellent dairy-free version; use dairy-free chocolate too.
Storage: Refrigerate leftovers up to 3 days and rewarm gently, whisking.
