Ingredients

  • 2 cups whole milk
  • 2 tbsp unsweetened cocoa powder
  • 2–3 tbsp granulated sugar
  • 1 pinch kosher salt
  • 2 oz semisweet chocolate, finely chopped, or 1/3 cup chips
  • ¼ tsp vanilla extract
  • marshmallows or whipped cream, for topping (optional)

Steps

  1. In a small saucepan, whisk the cocoa, sugar and salt with about 1/4 cup of the milk to make a smooth paste.
  2. Whisk in the rest of the milk and warm over medium heat, whisking often, until steaming with small bubbles at the edges. Don't let it boil.
  3. Lower the heat and whisk in the chopped chocolate until fully melted and smooth.
  4. Take it off the heat, stir in the vanilla, taste and add more sugar if you like. Pour into mugs and top with marshmallows or whipped cream.

Tip: Stir in a pinch of cinnamon or a drop of peppermint extract for a holiday twist.

Tip: Oat milk makes an excellent dairy-free version; use dairy-free chocolate too.

Storage: Refrigerate leftovers up to 3 days and rewarm gently, whisking.
