Ingredients

  • ¼ cup unsweetened cocoa powder
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon, plus more for serving
  • 1 pinch cayenne pepper (optional)
  • 1 pinch kosher salt
  • 4 cups whole milk
  • 3 oz bittersweet chocolate, finely chopped
  • 1 tsp vanilla extract
  • whipped cream, for serving (optional)

Steps

  1. In a saucepan off the heat, whisk the cocoa, sugar, cinnamon, cayenne and salt until no lumps remain.
  2. Whisk in about 1/2 cup of the milk to make a smooth paste.
  3. Whisk in the rest of the milk.
  4. Heat over medium, whisking often, until the milk is steaming and small bubbles form at the edges. Don't let it boil.
  5. Add the chopped chocolate and whisk until it melts completely.
  6. Take the pan off the heat and stir in the vanilla.
  7. Ladle into mugs and top with whipped cream and a pinch of cinnamon.

Tip: Start with just a tiny pinch of cayenne. You want warmth, not heat.

Tip: A cinnamon stick makes a nice stirrer for serving.

Storage: Refrigerate leftovers up to 3 days and reheat gently, whisking.
