Ingredients

Ham

  • 1 fully cooked bone-in spiral-sliced ham, 8 to 10 lb
  • ½ cup water

Glaze

  • ¾ cup brown sugar, packed
  • 3 tbsp dijon mustard
  • 2 tbsp honey
  • 2 tbsp apple cider vinegar
  • ¼ tsp ground cloves
  • ¼ tsp black pepper

Cook to 140°F inside (check with a thermometer).

Steps

  1. Heat the oven to 325°F (165°C) with a rack in the lower third. Let the ham sit on the counter while the oven heats.
  2. Discard any glaze packet. Set the ham cut side down in a roasting pan and pour the water into the pan.
  3. Cover the pan tightly with foil so the ham doesn't dry out.
  4. Bake until the center of the ham reads 120°F (49°C), about 12 minutes per pound. Start checking at 1 1/2 hours.
  5. Meanwhile, simmer all the glaze ingredients in a small saucepan, stirring, until the sugar melts and it turns syrupy.
  6. Take the ham out and raise the oven to 400°F (205°C). Remove the foil.
  7. Brush half the glaze all over the ham, letting some run between the slices.
  8. Bake uncovered until the glaze starts to bubble.
  9. Brush with the rest of the glaze and bake until sticky and browned at the edges and the center reads 140°F (60°C).
  10. Rest, then cut along the bone to release the slices and serve with the pan juices.

Tip: Check the label: this method is for fully cooked ("ready to eat") ham. A "cook before eating" ham must reach 145°F and rest 3 minutes.

Tip: Swap the vinegar for pineapple or orange juice for a fruitier glaze.

Storage: Refrigerate within 2 hours, up to 4 days. Freeze sliced ham up to 2 months. Save the bone for bean soup.

Make ahead: Make the glaze up to 3 days ahead and refrigerate; warm it before brushing.
