Ingredients

  • 1 ¼ cups rolled oats, old-fashioned
  • ½ cup peanut butter, creamy
  • ⅓ cup honey
  • ⅓ cup mini chocolate chips
  • 2 tbsp ground flaxseed (optional)
  • 1 tbsp chia seeds (optional)
  • 1 tsp vanilla extract
  • 1 pinch kosher salt

Steps

  1. Stir the peanut butter, honey and vanilla in a medium bowl until smooth. Microwave for 15 seconds if the peanut butter is stiff.
  2. Add the oats, chocolate chips, flaxseed and chia seeds (if using) and salt.
  3. Stir until every oat is coated and the mixture holds together when you squeeze it.
  4. Chill the bowl so the mixture is less sticky and easier to roll.
  5. Scoop level tablespoons and roll them between your palms into balls. Damp hands help.
  6. Put the bites in a container in a single layer, or with parchment between layers.

Tip: If the mixture is too dry to hold, add another tablespoon of peanut butter; too sticky, add a tablespoon of oats.

Tip: For nut-free schools, swap in sunflower seed butter.

Storage: Refrigerate up to 1 week or freeze up to 3 months.

Make ahead: Eat straight from the freezer or let them sit 5 minutes to soften.
