Ingredients

  • 4 medium apples, firm, such as Granny Smith or Braeburn
  • 1 tbsp lemon juice
  • 3 tbsp unsalted butter
  • ⅓ cup brown sugar, packed
  • 1 tsp ground cinnamon
  • ⅛ tsp ground nutmeg
  • 1 pinch kosher salt
  • 2 tsp cornstarch
  • ¼ cup water
  • vanilla ice cream, for serving (optional)

Steps

  1. Peel and core the apples, then cut them into slices about 1/2 inch thick.
  2. Toss the slices with the lemon juice in a bowl so they don't brown.
  3. Melt the butter in a large skillet over medium heat.
  4. Add the apples and cook, stirring now and then, until they start to soften at the edges.
  5. Sprinkle the brown sugar, cinnamon, nutmeg and salt over the apples and stir until the sugar melts.
  6. In a small cup, stir the cornstarch into the water until smooth.
  7. Pour the cornstarch mixture into the skillet and simmer, stirring, until the sauce is thick and glossy and the apples are tender but not mushy.
  8. Serve warm on their own or over vanilla ice cream.

Tip: Firm, tart-sweet apples keep their shape. Soft apples turn into applesauce.

Storage: Refrigerate up to 4 days. Warm gently in a skillet or the microwave.
