Ingredients
- 1 ½ cups long-grain white rice, or jasmine rice
- 1 tbsp vegetable oil
- 2 ¼ cups water
- ¾ tsp kosher salt
- 1 lime, zested and juiced (about 2 tbsp juice)
- ½ cup cilantro, finely chopped
Steps
- Rinse the rice in a fine-mesh strainer under cold water until the water runs mostly clear. Drain well.
- Heat the oil in a medium saucepan over medium heat. Add the rice and stir until the grains smell lightly toasty.
- Add the water and salt and bring to a boil over high heat.
- Turn the heat to low, cover tightly and simmer without lifting the lid.
- Turn off the heat and let the rice rest, covered.
- Grate the lime zest right into the pot, then add the lime juice and cilantro.
- Fluff and toss everything together with a fork. Taste and add more salt or lime if you like.
Tip: Add the lime and cilantro after cooking. Cooked in, they lose their fresh flavor.
Tip: For brown rice, use 2 3/4 cups water and simmer about 40 minutes.
Storage: Refrigerate within 2 hours and keep up to 4 days. Reheat covered with a splash of water until steaming.
