Chewy Oatmeal Chocolate Chip Cookies

Hearty, chewy and lightly spiced with cinnamon, these cookies get their texture from old-fashioned oats. They're sturdy enough for lunchboxes and soft enough to eat warm.

Ingredients

Dry

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¾ tsp kosher salt
  • 3 cups old-fashioned rolled oats, not instant

Dough

  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 ½ cups semisweet chocolate chips

Steps

  1. Heat the oven to 350°F (175°C) and line two sheet pans with parchment.
  2. Whisk the flour, baking soda, cinnamon and salt in a medium bowl. Stir in the oats.
  3. In a large bowl, beat the butter and both sugars on medium speed until creamy and lighter in color.
  4. Beat in the eggs one at a time, then the vanilla.
  5. Mix in the oat mixture on low speed just until combined, then stir in the chocolate chips by hand. The dough will be thick.
  6. Scoop 2-tablespoon mounds about 2 inches apart. Flatten each one slightly with your palm, since oat dough doesn't spread much on its own.
  7. Bake until the edges are golden brown and the centers look just set, rotating the pans halfway.
  8. Cool on the pans 5 minutes so they firm up, then move to a rack.

Tip: Use old-fashioned oats for chew. Quick oats make a softer, cakier cookie.

Tip: Swap half the chocolate chips for raisins or dried cranberries if you like.

Storage: Airtight at room temperature up to 5 days. They stay chewy longer with a slice of bread in the container.

Make ahead: Freeze scooped dough balls up to 3 months and bake from frozen, adding 2 minutes.
