Ingredients
- 2 boneless skinless chicken breasts, about 8 oz each
- 2 tsp olive oil
- ¾ tsp kosher salt
- ½ tsp garlic powder
- ½ tsp italian seasoning
- ¼ tsp black pepper
- 1 tsp lemon zest
Cook to 165°F inside (check with a thermometer).
Steps
- Pound the thick end of each breast with a meat mallet until the breasts are an even 3/4 inch thick.
- Pat the chicken dry, rub it with the oil and season both sides with the salt, garlic powder, Italian seasoning, pepper and lemon zest.
- Heat the air fryer to 375°F.
- Lay the breasts in the basket in a single layer, not touching, and air fry.
- Flip the chicken and air fry until the thickest part reads 165°F (74°C).
- Rest the chicken on a cutting board before slicing.
Tip: To cook four breasts, work in two batches unless your basket fits them with space around each one.
Tip: Use a separate cutting board for raw poultry, and wash hands, boards and knives in hot soapy water after handling it. Don't rinse raw chicken; it only spreads germs around the sink.
Storage: Refrigerate in an airtight container within 2 hours, up to 4 days. Reheat in the air fryer at 350°F for 3 to 4 minutes.
