Ingredients

Croutons

  • 3 cups crusty bread, cut into 3/4-inch cubes
  • 2 tbsp olive oil
  • ¼ tsp garlic powder
  • 1 pinch kosher salt

Dressing

  • ½ cup mayonnaise
  • ⅓ cup Parmesan cheese, finely grated
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 anchovy fillets, minced, or 1 tsp anchovy paste (optional)
  • 1 clove garlic, finely grated
  • 2 tbsp olive oil
  • ¼ tsp black pepper
  • 1–2 tbsp water, to thin

Salad

  • 2 large heads romaine lettuce, or 3 romaine hearts
  • ¼ cup Parmesan cheese, shaved or grated, for serving

Steps

  1. Heat the oven to 375°F (190°C). Toss the bread cubes on a sheet pan with the oil, garlic powder and salt.
  2. Bake, stirring once, until golden and crunchy. Let them cool on the pan.
  3. While they bake, whisk the mayonnaise, Parmesan, lemon juice, mustard, Worcestershire, anchovies and garlic in a bowl. Whisk in the olive oil, pepper and enough water to make it pourable.
  4. Wash the romaine and dry it very well in a salad spinner. Tear or chop it into bite-size pieces.
  5. Just before serving, toss the romaine with about two-thirds of the dressing until every leaf is coated. Add more to taste.
  6. Top with the croutons and Parmesan and serve right away.

Tip: Worcestershire sauce and anchovies contain fish. Leave out the anchovies and use a vegetarian Worcestershire for a vegetarian salad.

Tip: Top with sliced chicken cooked to 165°F to make it a meal.

Storage: The dressing keeps covered in the fridge up to 5 days. Croutons keep airtight at room temperature up to 4 days. Dressed salad is best eaten right away.

Make ahead: Make the dressing and croutons up to 2 days ahead and toss with the lettuce just before serving.
